·      A lidded glass or enamel container: To freeze and store your batch (though it rarely lasts more than a few days in our house!).

Vanilla Ice Cream Base Recipe

1 cup whole milk
3/4 cup granulated sugar
pinch of kosher salt
2 cups heavy cream
1 tablespoon Madagascar vanilla bean paste (or pure vanilla extract)
For snickerdoodle ice cream: 2 teaspoons ground cinnamon
  1. In a medium bowl, whisk together the milk, sugar and salt until the sugar has completely dissolved.
  2. Stir in the heavy cream, vanilla and cinnamon.
  3. Cover and chill the mixture in the refrigerator for at least 2 hours or overnight.
  4. When the ice cream mixture has chilled thoroughly, pour it into the frozen bowl of an ice cream churning machine. Be sure to use a spatula to scrape out all that yummy vanilla!
  5. Churn for 15 to 20 minutes according to your machine's instructions. The ice cream will be a soft, creamy consistency and ready to serve. For a firmer consistency, transfer to an air tight container and freeze for at least 2 hours.

Tips for Making Perfect Ice Cream at Home

If you’re new to homemade ice cream, don’t worry. It’s much easier than you might think. Here are a few tips to help you make the best batch possible:

1.    Chill Your Ingredients Thoroughly

Your base should be cold before you pour it into the ice cream maker. If you have time, mix everything the night before and let it chill in the fridge overnight. This gives the flavors time to meld and helps the machine churn more efficiently.

2.    Don’t Skip the Vanilla

A high-quality vanilla paste makes a world of difference. If you can, use a pure paste—or better yet, scrape the seeds from a real vanilla bean for a deeper, more complex flavor.

3.    Taste the Base Before Churning

Before you pour your mixture into the machine, give it a taste. This is your last chance to adjust sweetness or add flavor—like that pinch of cinnamon!

4.    Use the Right Storage

Once churned, ice cream should be transferred into a shallow, airtight container for freezing. Press a layer of parchment or wax paper on top before sealing the lid to prevent ice crystals from forming.

5.    Let It Soften Before Serving

Homemade ice cream tends to freeze more firmly than store-bought versions. Let it sit out on the counter for 5–10 minutes before scooping to get the perfect texture.
